Sweet potato, feta and pine nut salad

This salad is the perfect side dish for a summer BBQ or a tasty lunch option that offers both nutritional benefits and comfort food enjoyment. It’s best if you BBQ the sweet potato, but simply putting it under the grill also works.

I haven’t put the measurements on the ingredients other than dressing as it can be adjusted depending on personal preference or the number of servings you’re making. The dressing makes enough for about four servings, and it can be kept in the fridge for a few days once made.

Ingredients:

Sweet potato
Feta, chopped or crumbled
Red onion, finely chopped
Spinach
Pine nuts
Olive oil or coconut oil

3 tbsp balsamic vinegar
2 tbsp runny honey
1 tbsp wholegrain mustard

Method:


1. Peel and chop the sweet potato, then simmer for five minutes.
2. Coat the potatoes in your oil of choice and place on the BBQ or under the grill until brown.
3. Meanwhile, toast the pine nuts in a frying pan on a low heat – be sure to keep an eye on them as they burn easily.
4. Mix all the dressing ingredients together, and place all the other salad ingredients on a plate.
5. Top the salad with the sweet potato and dressing.
